Rabbit Ridge Winery, Underground Wine Storage

00Jacobs Associates was retained to design underground wine storage for the new Rabbit Ridge Winery in Paso Robles. The project consists of a series of interconnected 14 to 16 feet wide arched wine storage tunnels in the side of a hill adjacent to the existing winery and under vineyards. The layout of the tunnels utilizes as wheel and spoke arrangement with two access portals through the hillside so as to maximize the storage space available. The portals are located in sandy clays designed as retaining structures, while the tunnels are situated in weathered shales of the Paso Robles Formation.
